Greetings Tim!
Got watermelon? We do! What a great way to cool off, hydrate, and enjoy a sweet nutritious snack. How's that for multitasking? Watermelon has approx. 92% water content, contains only 48 calories per cup, and is a very good source of vitamin C, beta-carotene, and lycopene (this is the kind of stuff that helps us to prevent cancer and such!)
It is also a good source of vitamins B1 and B6, pantothenic acid, biotin, magnesium, potassium, and dietary fiber. Another watermelon benefit lies in its alkalinity. To remain in a healthy state, we want to keep our bodies relatively alkaline. Many foods, especially processed foods, grains, and meats, bring us to an acidic state. More on this in another newsletter...
Oh, now here's a good physical benefit... If you carry it around long enough it will even make you strong! Did you know they can weigh in up to 90lbs? At the Foothills Farmstand we have them available in two sizes, large and a small icebox size that's perfect for packing along in your cooler when going boating, for a picnic, or camping. Cut it outside to spare the messy kitchen.
Speaking of mess, ask us for a small box or tray to secure it in your vehicle on the way home. last year I had one roll around in the back of my SUV. It crashed into the spare tire gear (lost the battle), cracked open, and well, it was not pretty!
Also keep in mind that while watermelon has a high water content, that means it absorbs a large quantity of water from the ground. If grown conventionally, this means it could contain high amounts of pesticides from contaminated soil. Sure, you can wash off the thick rind, but what we don't want to "throw out the baby with the bath water", eh?
FYI, if you wish to receive up to the mintue updates on what's in store at the farmstand, i.e. Saturday, Super Sunday, and Miracle Monday boxes, let Rhonda know by contacting her at organicproducegals@ymail.com
I, the Organic Produce Gal, just stick to the OPG Weekly News (and work on Fridays, play with food, and do all that other crazy promo stuff!) If it gets too long and boring you can just browse around or simply unsubscribe using the link at the bottom of the news.

| PRODUCE IN THE NEWS...
If you didn't try one last week, be sure to get your hands on one of our new JAZZ APPLES from New Zealand. Super crunchy, sweet with a hint of tart, and loaded with flavor, they live up to their name as we are so "jazzed" to have them on board!
While you chill out with some watermelon, you may want to heat it up a little with some salsa...
back by popular demand, expect to see some of our favorite "Fresh Cut" Salsas in original, avocado, and pineapple varieties. We'll still have the jars and now is a perfect time to create your own as we plan to sport an array of the finest ingredients with Roma tomatoes at the best price of the year, jalapeno peppers returning, and red and Vidalia Sweet onions.
Our new item this week is dried garbanzo beans, now you can even make your own hummus!
Also returning from a time out of the farmstand, look for fresh basil, portabella mushrooms, red Holland bell peppers, and peaches. In the tuber department we have fingerling potatoes and jewel yams back for you.
Many folks have asked me, "What's the difference between a yam and a sweet potato?"
In a nutshell, while they look similar and have some of the same health benefits, they are not even distantly related!
Yams are the tuber of a tropical vine related to lillies and grasses. They have a higher water and natural sugar content, usually orange flesh, and a darker skin, typically brown or reddish. High in omega 3 fatty acids, their EFA ratio is preferable to that of the sweet potato, however, they contain compounds that can aggravate inflammatory conditions, but much less so than many other foods.
Sweet potatoes come from the morning glory family, have a lighter, thinner skin, pale yellow flesh, with a dry texture similar to that of a baking potato, and are not as sweet as the yam. They contain less omega 3's and twice the omega 6's as the yam, twice as much protein, and have anti-inflammatory compounds. One of the most nutrient dense foods, they contain massive amounts of vitamin A.
The yam and sweet potato have similar health benefits, both low on the glycemic index (don't make your blood sugar rise too fast), and are densely nutritious containing lots of minerals such as potassium, magnesium, phosporous, selenium, zinc, and copper.
With that in mind, scroll down to see my recipe of the week!

This week's recipe features a new grilling favorite. I brought this to my neighbor's BBQ last week and it was a hit (well, she IS from Jersey, she named it!)... JERSEY GRILLERS. Like last week's grilled veggies, they are great for a BBQ, can be prepared in advance, and require very little cleanup. Thanks for inspiring me, Kat!
You can learn to "take charge of your nutrition" by watching "Kitchen Nutrition" on
Now here's another one... To obtain a discount and lots of information on a Vitamix Blender go to www.vitamix.com and enter coupon code #21-000039. There is also a two speed model (Turboblend 4500) that is almost the same as the one on the website, but has a simple low and high speed option vs. 10 speeds (and a much lower price!) This is the model I use... get 'er going, then crank it up 'til smooth!
